Warm Mackerel Supper

Oily fish like Mackerel is a brilliant source of fish oils and proteins. It’s also great value for money. Many people tell me they don’t like Mackerel, I just give them this recipe and find it will convert most!
This recipe is designed for fresh Mackerel but you could also use smoked or tinned, in which case it only needs to be under the grill for 3 - 4 minutes.
Such a quick and simple recipe. I could eat this every single day.
Instructions
- Steam the carrots lightly, then place on a baking tray with the chickpeas, coat with a Tablespoon olive oil and place under a hot grill for 5 minutes.
- Mix up some more olive oil (Tablespoon) honey, lemon juice, garlic and cayenne pepper. Brush some of it over the mackerel and put the rest to one side.
- Place the mackerel over the carrots & chickpeas then put back under the grill for another 5 minutes or until cooked.
Finishing the dish
- Serve with the rest of the dressing with some leafy green vegetables and a small portion of rice if needed.
