Pomegranate Dressing

Pomegranates are rich in phytonutrients. This dressing is so simple with just 4 ingredients but it tastes delicious and adds flavour and colour to simple salads or even roasted vegetables.
This is such a simple dressing to make. I know Pomegranates can be a fiddle to open and release the seeds, I always roll them before I cut them (releases the seeds a little), then quarter them and the seeds pop out more easily. I usually make a batch and will keep it in the fridge for up to 5 days.

Ingredients
- 6 olive oil extra virgin
- 1 Pomegranate
- 1 pinch salt e.g. Himalayan or SeaSalt
- 1 clove garlic

Instructions
- Cut the pomegranate in quarters and remove all the seeds. Add these into a blender along with the other ingredients. Mix together in the blender.
